The Three Fishes, Mitton

The Three Fishes lies four miles south west of Clitheroe and just over two miles from the village of Whalley, in Lancashire’s Ribble Valley. The Three Fishes has recently been brought back to life by Nigel Haworth and his team. Beautifully restored, both sympathetically and sustainably, whilst keeping the integrity of the listed building at the forefront of our design decisions.

It’s also the heart of a very special ‘farm-to-fork’ project, where they grow their own produce and source the best that the shire has to offer.

Focusing on regional food, the dishes range from contemporary to classic British, showcasing Lancashire’s exceptional ingredients, and the best of global cookery. The menu will change with the moods and seasons, as food inevitably should. There will be no strawberries in winter and no game in spring – just great seasonal food all the year round.

The Brief

Michelin starred chef and TV personality Nigel Howarth wanted to create a modern, cosy gastropub in the heart of Lancashire, where he could produce great British dishes with an emphasis on farm to fork.

Part of the brief asked for and easy to clean and operate, with state of the art tech in a sustainable environment with energy managed appliances that fully optimised power usage. We installed the Ecochef SMART energy to regulate and record energy use, which gives us accurate kWh data.

The Facts

The Three Fishes’s SMART kitchen has a maximum power output of 280 kW per hour.
At peak service a maximum of 42kW per hour is used, a saving of 238kW per hour.
