The Dawnay Arms Inn, built in 1779, is situated in the picturesque village of Newton on Ouse, at the gates to Beningbrough Hall and is owned by chef Martel Smith and his wife Kerry, a former Hilton restaurant bar manager.
Eight years ago the couple left their fine dining restaurant, 3 York Place in Leeds, following the birth of their first child and stumbled across the Dawnay Arms at an auction. After three months of work to ensure the premises was operational, they opened the doors for business in August 2007.
When Martel moved to The Dawnay Arms from his restaurant in Leeds he brought his Bonnet Suite with him and had it reinstalled as a wall suite When we originally spoke to Martel this suite was in need of some serious repair which was going to cost a few thousand pounds When asked what he wanted he replied like most chefs do with “an Island suite but I can’t afford it.”
He was keen at looking particularly at energy use and to see if he could fund the project through potential savings that might be had by switching from bottled gas to all electric Ecochef Stove.
The Dawnay Arm’s Ecochef has a maximum power demand load of 35 kW per hour.
At peak service a maximum of 9kW per hour is used, a saving of 26kW per hour.
